So you’ve decided to buy salmon caviar. What should you look for when purchasing caviar? Here are a few quick caviar buying tips, the DO’s, to keep in mind while buying salmon caviar:
DO buy caviar from a reputable vendor which sells a considerable amount of red caviar. If you purchase from a well-known, vendor, then odds are that not only will the salmon caviar be of high quality, but most likely it will also be fresh, as the caviar should move relatively quickly off the shelf. Furthermore, reputable distributors tend to be available and willing to answer your questions about the different types of caviar and the different grades of caviar. Also reputable vendors will allow you to taste the caviar in-store before purchasing or at the very least return the salmon caviar if it is not satisfactory. They will also store the product correctly, between 28 -32 degrees Fahrenheit (-2 to 0 degrees Celsius) and will turn the tins/jars regularly so that the oils are evenly distributed over the roe.
DO taste caviar in-store if possible. When tasting salmon caviar place a small amount on the back of your hand in the “V” between your thumb and forefinger. Roll the salmon roe around in your mouth and then pop to release the flavor. Fine caviar should leave the faint smell of the ocean on your hand. If the salmon caviar tastes muddy or smells overly fishy, it’s not quality caviar and/or is past it’s prime. Do not buy the caviar.
DO check to see that the caviar packaged in tins are tightly sealed with no air pockets. The salmon caviar should be firmly packed so that there are no air bubbles; air is one of salmon roe’s worst enemies, very quickly destroying the integrity of the product.
DO turn the jar. Salmon roe is frequently sold in glass jars ranging in size from 20z (50kg) to 50z (150kg). When checking for purchase, turn the jar. The salmon caviar should move smoothly around and follow the motion of the jar.
DO buy caviar only as much as you anticipate will be consumed. The rule of thumb is 1-2 oz per person. See our post on how to serve caviar.

DO buy caviar before the sell-by-date. Seems so obvious but you’d be surprised.
